Today I’m sharing one of my favourite breakfast recipes with you: banana oatmeal pancakes!
These pancakes contain only a few ingredients, and are absolutely delicious. Bonus: they’re super healthy as well! Guilt-free indulging for sure!
Ingredients:
A ripe banana
One egg
50 grams rolled oats
50 grams milk
Stevia (optional)
Vanilla extract (optional)
Combine the ripe (or overripe, the riper the sweeter!) banana with the egg, oats, and milk in a blender, and blend until you get an almost smooth batter. Depending on how ripe your banana is, you can add a little bit of stevia for extra sweetness. I also like to add a few drops of vanilla extract sometimes to make it extra yummy! You should have a slightly runny batter. Feel free to change the measurements, this recipe isn’t that strict.
Heat some butter in a pan, and bake a large dollop of batter until it’s golden brown.
I love serving these with honey, or fresh fruit.
To make them vegan, just leave out the egg and milk. It will taste differently but should work as well. If the batter is too thick, use almond or soy milk or water.
Ever since I first made these pancakes, I cannot stop eating them. I’ve been having a batch once a week, and because of all the good ingredients in this, I don’t feel bad at all!

It's a guideline, I usually just eyeball it. It also depends on your banana, the riper it is the more liquid it will release and the less milk you need. Sometimes I leave the milk out altogether :)

I made these with maple syrup a few weeks ago, and actually the syrup was totally unnecessary, because the banana made it sweet enough :)
Is this the same oats you use for your healthy muffins? I have to try this as well! ^_^
