Peaches are my favourite fruit. Since they’re only in season for such a short amount of time, I like to make the most of them while I can. I use them in fruit salad, popsicles, and… couscous!
I made this delicious peach couscous salad the other day, and had to share the recipe with you. It’s a light, summery dish that’s perfect to bring to a potluck or barbecue, or just enjoy by yourself :)
Ingredients:
200g couscous
200g water
2 peaches or nectarines
Half an onion
Olive oil
Apple cider vinegar
Fresh mint
Salt
Pepper
Some type of nut (I used almond)
Put the couscous into a bowl. Boil the water and pour over the couscous. Let sit for 4 minutes, before fluffing the couscous up with a fork and letting it cool down. Dice the onion and peaches and add to the couscous. Cut up the mint and nuts and add to couscous. Combine oil, vinegar, salt and pepper to taste to make a dressing and add this to the dish.
