For all your healthy habits, sometimes you just crave something bad. Like pizza. Who doesn’t love pizza? The stringy cheese, the flavours, the crispy base…
Today, I have a healthier alternative for you. My pizza light has all the good qualities of pizza, but not all of the bad ones. Granted, it’s not the healthiest of dishes since the fat content is still pretty high, but it’s infinitely better than ordering a pizza! And you won’t have to compromise on flavour, at all.
It’s vegetarian, it’s colourful, it’s delicious: it’s pizza light!
Ingredients
2 tortillas
2 tomatoes
1 ball mozarella cheese
4 tsp pesto
Handful pineseeds
Handful rocket
I used tomato tortillas, but you can use flour, corn… whichever you prefer. This recipe makes two servings.
Pre-heat the oven to 200°C.
Spread two teaspoons of pesto over each of the tortillas. Slice the tomatoes, and cover the tortillas with one tomato each. Slice the mozarella cheese and distribute onto the tortillas. Place them in the oven for 10 minutes, or until the cheese is melted and the tortilla starts to become golden brown.
Meanwhile, roast some pineseeds on a pan without oil.
When you take your pizzas out of the oven, sprinkle the pineseeds on top and cover them in a handful of rocket. Gotta get those greens in!
Guys, this is so good. It’s pretty filling, too, so one of these makes a great lunch.

Jenn Boff I know that. I also know she's concerned about eating healthy. She rarely eats meat too. Most people don't know the cruelty behind dairy. Just sharing some info that's all ;)
