My Staple Recipes

I’m sure everybody has them: those recipes that you know by heart, and can whip up quickly and perfectly every time. Those dishes you go for when you feel like having an old favourite, something fail-proof. I definitely have a collection of staple recipes, and I’d like to share them with you today. Tex-Mex Anything

I have something from the Tex-Mex category regularly. Very, very regularly, haha! I usually make some kind of chilli or something else stew-esque like that, and then pair it with guacamole and some kind of carb. Sometimes I’ll make wraps or enchilladas, sometimes I’ll have some nachos with it, or rice or pita bread… This is one of my firmest staples.

The other stew-type thing I make ALL THE TIME, is something similar to this, using whatever’s left in my kitchen, adding a bunch of legumes and canned tomato, and seasoning it with ras el hanout. I’ll either have it as is, or add some couscous or bulgur. Yummyyyy!

Coconut & Ginger Carrot Soup

This is a typical end-of-the-month-dish, since it’s super budget friendly but still delicious and nutricious. I can make a giant pot of this for about €3, and it always turns out good.

Zoodles/Pasta al Pesto

My friend’s pesto pasta recipe has been high up on the favourites list in my house for years, and recently I’ve started making it with zoodles (zucchini noodles) instead of pasta. Both versions are delicious! The pasta al pesto isn’t the healthiest of dishes, but the zoodle variation is quite alright. I’m very happy to overlook the unhealthiness for the taste though, haha!

Now here’s an oldie but a goodie, haha! This is the first recipe that ever went up on Loepsie.com. I go through phases where I either make a batch of these every week or I don’t make any for months, but I’ve been making them a lot again recently. I love using different add-ons and toppings every time for variation, and using them as a snack between meals.

  1. Usually when I don’t know what to cook I simply make a rice pan with lots of vegetables. It’s cheap, nutritious, tasty, easy to make and also handy when you have leftovers. Lately I got into bakes as well, although I would frown at my mom when she made these when I was a kid, haha!
