Banana Bread Recipe

There’s this girl. She’s a really good friend of mine, and my personal food guru (although she doesn’t know about it). I go to her for advice on cooking, but especially when it comes to baking. I’m not a baking star myself, but she’s a downright goddess. Everything that comes out of her oven is heavenly.

So I went to visit her and we decided to bakeĀ ourselves a treat. After the weekend, where we’d both been consuming excessive amounts of sweet food, we decided to bake ourselves a healthy, light and delicious treat. Out cameĀ this amazing banana bread!

Of course I HAD to share the recipe with you. It’s really easy to make!

Ingredients:

– 140 g spelt flour
– 100 g self rising flour
– 2 tsp baking soda
– pinch of salt
– 300 g mashed (over)ripe banana
– 3 eggs
– 175 ml Greek yoghurt
– 2 tbsp agave syrup
– 1 cup blueberries
– 25 g pecans

Preheat oven to 160 degrees Celsius.
Combine all the dry ingredients, then combine wet ingredients in a separate bowl. Mix wet into dry. Make sure to add the blueberries last and mix them in carefully, so they don’t get squished.
Pour the batter into a cake mould and bake for 70 minutes.

Guys. This is SO good! We served it with caramel pecan icecream, amazing combo.

  1. Loepsie Maakt niet uit! Ik heb bakingsoda gevonden. Je kan het bij de toko krijgen :) Maar wel fijn dat je ook bakpoeder kunt gebruiken :) Weet ik dat ook weer :D

  3. Hey Lucy, where can I buy baking soda? What is the translation? And can I use baking powder instead? Because I went to two supermarkets, but I couldn't find baking soda/zuiveringszout (!?!) Please, help me! I desperatly need to make this banana bread!
