Summer is the time when people bust out their grills, and smells of searing meat start to fill the air. Awesome if you’re into that, but my dear vegetarians, I’ve got you covered. You will love this cream cheese stuffed pepper with the perfect side of bulgur salad!
Grilled Stuffed Pepper
Ingredients:
– Mini peppers
– Garlic and herb cream cheese
This is the simplest thing to make, but you won’t believe how good it is. Simply remove the tops off the peppers, where the seeds are, and stuff them with the cream cheese. Place them on the grill until the peppers go soft. Feel free to experiment with different kinds of peppers and cheeses! My dad filled his with gorgonzola (oh my O_O).
Bulgur Salad
Ingredients:
– Bulgur (200g serves 2/3)
– Tomatoes
– Cucumber
– Chili pepper
– Olive oil
– Lemon juice
– Salt & pepper
Put the bulgur in a heat resistant pot, and pour 300ml of boiling water over it. Cover and leave for 15 minutes.
Dice the tomatoes, cucumber and chili pepper into small cubes. After 15 minutes, fluff up the bulgur with a fork and add to the other ingredients. Add olive oil and lemon juice, and salt & pepper to taste.
You can use couscous or quinoa instead of the bulgur.
The acidity from the lemon juice complements the cream cheese really well, and the chili pepper gives the whole meal a nice kick.
