Last night, I was once again trying to figure out what to do with my leftover vegetables. I realised I had a bunch of green vegetables in my fridge so I decided to make a fresh, green soup. The main ingredient is broccoli and I think some homemade garlic croutons are the perfect match for it. Here’s a recipe for my improvised but delicious broccoli soup!
Ingredients
1 broccoli
4 stalks celery
1 cup green peas
1 cube vegetable stock
1 onion
2 cloves garlic
1 slice bread
2 tbsp oil of choice
salt
pepper
Serves 3 to 4 people.
Cut the broccoli into little rosettes, and the stalk into cubes. Put it in a large pot. Bring enough vegetable broth to a boil to cover the broccoli, and pour into the pot. Let simmer on medium heat. Meanwhile, cut up the onion, celery, and one clove of garlic, and add them to the pot as well. Allow to boil for 30 minutes or until the vegetables are nice and soft. Blend everything with a handheld mixer.
For the croutons, heat up a dry pan on medium heat. Pour two tablespoons of oil (I use sunflower seed oil) into a bowl, and mince the garlic over it. Season the oil mixture with a little bit of salt and pepper. Cut a slice of bread into cubes, throw the cubes into the bowl and stir until all the cubes are covered in garlicy oil. Then just empty the bowl of croutons into the pan and bake them until they’re crispy.
Some cheese on top would be delicious with this broccoli soup, as well. This is a great way to get your veggies in! I hope you enjoy this quick, simple soup for busy days when you don’t feel like spending hours in the kitchen.
