Summertime Mash

Mashed potatoes with boiled or steamed veggies are the go-to meal during winter in Dutch cuisine. But who says you can’t have your traditional mash in summer? This fresh, light version is perfect for warmer days, and is full of spring & summer seasonal products. I absolutely love it!

Springtime Mash 1

Ingredients

1 kilo potatoes
300 g fresh spinach
200g marinated tofu
150g green peas
1 red onion
Butter
Feta cheese
Salt & pepper

Springtime Mash 3

Recipe makes 4 servings.

Peel your potatoes and cut them into same-sized pieces. Boil with a pinch of salt for about 20 minutes or until soft. In the meantime, sautée the onion (diced) on medium heat, and add the green peas and marinated tofu. I used ready-made tofu but you can of course marinate some yourself. Fry everything until it’s done.

When the potatoes have softened, drain them. Add a cube of butter to the potatoes, as well as a little salt and pepper, and mash them.  When the mash is done, add your onions, tofu and peas and stir everything together.

Lay out a bed of fresh spinach leaves on which to serve the mash. As a finishing touch, sprinkle some feta cheese on top.

This dish is incredibly easy to make, and it’s delicious & healthy. I ended up eating this for three days in a row (I made way too much) and I didn’t mind at all :) Enjoy!

  1. This looks really good, like really, reeeaaally good. Mashed potatoes are my favorite and now I finally know what to serve my boyfriend when he comes home late from work on saturday, yay. Just a question as I’m not very familiar with tofu: what marinade do you think works best? I don’t want it to be too heavy. Probably something with tomatoe and simple herbs, mhmmhm!? Any ideas?

    1. I usually just buy pre-marinated tofu from the vegetarian “meat” section in the supermarket, so I don’t have much experience with making my own marinades, but I’d definitely keep it simple for this recipe, with some salt and herbs :)
