It’s always time for tea, even when the sun is shining bright, temperatures rise and you’d wish you could just wear a bikini all day. That’s why today I’m sharing this recipe for an amazing, refreshing home made iced tea that’s perfect for those warm summer days. It combines some of my favourite fresh flavours, mint and lemongrass, with the energy boost that green tea provides as an added bonus. Super quick to make, low in sugar, no strange additives. Let’s go!
Ingredients
1,5 l water
1 tbsp loose leaf green tea
3 stalks lemongrass
2 twigs mint
1/2 lime
1 tbsp sugar
This is the simplest thing to make ever: all you need is a bit of patience. Bring 1,5 liters of water to a boil and allow to cool down to 75 °C. In the meantime, add the tbsp of loose leaf green tea to a large pitcher. Cut the base off the lemongrass, remove the outer peel, and crush it a bit with the back of a spoon before adding it to the pitcher. Rinse the mint and slap it to release the flavours, then add to the pitcher as well. Add your water and stir everything together. Allow to cool down to (almost) room temperature before adding the juice of half a lime and a tablespoon of sugar or another sweetener of choice. Stir, taste the tea and add more sweetener if needed. Allow at least an hour for the flavours to come together. Store in the fridge and serve cold.
If you plan on storing this for more than a few hours, I recommend sifting the iced tea and storing it in an air-tight bottle without the leaves and lemongrass. I wouldn’t store it for more than a day.
This stuff is amazing, guys. It’s super simple to make, looks really nice in the jug and is very refreshing with all the cooling flavours. Another great thing about it is you have full control over how much sugar or sweetener goes in. I don’t have much of a sweet tooth and store bought iced tea is usually way too sweet for me, so I like having the option to keep it nice and natural. It’s great that this drink packs all the flavour with only a little sugar!
