Oh yes, it’s time for another energy ball recipe. I can’t even tell you how much I love these little healthy snacks bursting with protein, natural sugars and healthy fats. Little energy bombs they are, but made of whole ingredients that’ll provide slow release of energy and keep your blood sugar from crashing. Not to mention they’re easy to make, easy to take with you and of course delicious.
I already shared my chocolate matcha energy ball recipe with you, but I have a new flavour combo for you today: peanut butter and chocolate. The old time favourite!
This recipe features three different types of nuts, which are great sources of iron, magnesium and essential amino acids. Another key ingredient is dates, which provide delicious sweetness, but are also high in fiber and potassium. The chocolate flavour is aquired through cacao powder, rich in antioxidants and a known mood-booster. A welcome bonus in an already delicious healthy snack, if you ask me :)
Ingredients
250g pitted dried dates
65g cashews
60g hazelnuts
2 tbsp pure peanut butter
1 tbsp cacao powder
1 tbsp vegan protein powder (optional)
1 tbsp chocolate sprinkles
Recipe
Add the pitted dried dates, cashews, hazelnuts, peanut butter and cacao powder into a food processor. I added a tablespoon of protein powder as well for an added protein boost, but you can leave that out if you like. Pulse the food processor a few times to break up the nuts a bit, then turn it on at a high speeds for a few minutes until a sticky mixture begins to form. If your mixture is too dry and won’t combine, you can add a tablespoon of water. Don’t be too quick to do this though, the food processor needs a few minutes to take the mixture to a sticky state.
When the mixture has become a sticky mass, add your chocolate sprinkles (or mini chocolate chips) and pulse a few times to stir them in.
Roll bits of the mixture into little balls with the palms of your hands. This recipe should yield about 25 balls, but much depends on the size you make them.
Refrigerate the balls for at least an hour before serving, and store in the fridge.
I like to have these as a post-workout snack to quickly bump up my energy and get some protein in. I also love bringing a few with me in my bag when I leave the house for a few hours, so I know I’ll always have something to snack on should the hangriness arrive :)
I just recreated those. Sooo delicious and the nice thing about these kinds of energy balls is that you have room for variation and donβt have to keep precisely to the gram with your measurements.
