The recipe I want to share with you today is one that comes from Robbert’s mom. It was the first more complicated dish he and I cooked together, and we’ve been loving it ever since. It’s deliciously cheesy and filling- total comfort food! And it’s vegetarian, too.
Ingredients:
450 g frozen spinach
250 g grated cheese
4 tbsp unwhipped cream
milk
1 cube vegetable stock
3 sheets puff pastry
4 tbsp plain flour
50 g butter
3 eggs
dill
tarragon
salt
pepper
Before you start, make sure the spinach is thawed and drained.
Pre-heat the oven to 220 °C.
In a bowl, whisk together the eggs, unwhipped cream, some dill and tarragon, salt, pepper and some grated cheese. Fry this into an omelette.
In a saucepan, melt the butter. Add the flour and keep stirring really well (this burns quickly). Add the stock cube. Gradually start adding small amounts of milk, until you get a thick sauce. Add some more dill and tarragon, and most of the grated cheese (not all of it).
Add some grated cheese to the spinach. Tear up the omelette and add to the spinach as well.
Cover the bottom and sides of a greased pie mold in puff pastry. Place the spinach mixture into the mold, then pour the sauce over it. Cover with the rest of the grated cheese, then bake for 25 minutes.
This savoury spinach pie was very hard to photograph, since it just doesn’t look very pretty ;)
