Bietenstamppot: Beetroot Mash

Someone once asked me why I don’t share anything from Dutch cuisine. Well, aside from the baked goods I shared some of this year, Dutch cuisine pretty much consists of mashing anything you have with boiled potatoes. That results in mostly very simple and not too fancy-looking meals, but since it’s winter time, I too find myself cooking these “stamppot” (mash pot) dishes. The ultimate classic is “boerenkool stamppot”, kale mash pot, and I’m sure I’ll share the recipe for that one day, but today I have beetroot mash for you. I tried this the other day and it’s gooood! For some reason I just love ugly, farmer-type dishes, have you noticed? :P

Ingredients

1kg potatoes (the kind that can be mashed)
350g beetroot
175g smoked tofu strips
1 apple
1 red onion
Butter

I used pre-cooked beetroot from a jar. The original recipe calls for bacon, but I substituted that for smoked tofu strips to make it vegetarian.

Peel the potatoes and cut them into large chunks. Boil the potatoes for 20 minutes, until they’re soft. In the meantime, heat up some butter in a pan. Cut the onion in half, then cut into rings and sauté for a few minutes. Add the tofu to the pan. Cut the beetroot into little cubes, and add to the pan. Cut the apple into little cubes as well, and add it to the pan. You don’t need to peel the apple. Sauté for a few minutes until everything softens up.

Drain the potatoes, add a bit of butter and mash them up. Then add the beetroot mixture to the mashed potatoes, and stir everything together.

That’s it! Oh, the beauty of simplicity :) Enjoy!

    1. Thank you for posting this! It reminds me so much of my grandmother, who was Dutch, and always dropped a few traditional recipes into the mix. Her “Red cabbage fit for a king” is still one of our staples. I was actually looking for what I think is I called “Red Flannel Mash” , but this is WAY better!
