Superfood Oatmeal

I’ve fallen in love with oatmeal. My grandparents used to make it for me as a kid and I always loved it, but for some reason I only started making it for myself a little over a year ago. I’ve tried countless toppings and variations since, and I tend to go through phases where I prefer once specific mix. Right now, whenever I don’t feel like thinking about what I’m going to make for breakfast, I always reach for my superfood oatmeal. It’s delicious, nutricious and wholesome, what more could you ask for?

Ingredients

1/2 cup oats
almond milk
walnuts
dried red currant
chia seeds
crushed line seeds
stevia (optional)

Put the oats into a saucepan and pour enough almond milk over to cover them. Heat over medium heat until the oatmeal reaches a nice soft, slimey consistency. Add the red currant right away so they soften, then add the other toppings later on. If the oats haven’t softened by the time the oatmeal goes thick, thin it out with a little water. Add a pinch of stevia if you have a sweet tooth. Best enjoyed with a cup of good green tea.

I love this so much! The flavours of the “superfood oatmeal” aren’t too out there, which I like in the morning, but there’s still a little bit of everything; sweet, sour, nutty… The ingredients are all really good for you and provide you with healthy fats, proteins, and fibers to fuel you for hours.

  1. I first tried this just two weeks ago. I saw the recipe in your clean eating video, but I never felt like doing it until now. It is really good though, I always make it with banana slices, but I guess my preference will vary too. So thanks for sharing the recipe , oats have a good chance to become my superfood too! :)
    Oh and by the way, your granola bar and healthy breakfast muffins turned out soooo delicious too! :)

  2. Yummy. And easy. I love to experiment with different additions to my oatmeal and always love seeing what someone else does. I even saw someone make it savoury–though i haven’t tried as I have a huge sweet tooth and any time I can get guilt-free sweets is a plus in my book, haha: and I’m not sure how I feel about the savoury version, teehee.
