Spiced Pumpkin Stew | Vegan Recipe

Nothing says autumn like pumpkins, am I right? For that reason I’m bringing you another pumpkin recipe to day. You can never have enough pumpkin recipes! Today’s dish is a lovely hot stew featuring the warm, slightly sweet flavours of Northern African cuisine. I pulled out my ras el hanout spice mix again after a long time and I have to say, it works wonderfully with the creamy pumpkin. This recipe is a slightly modified version of a recipe clipping I found in my binder, originally from Allerhande. It’s super simple, just the way I like it, healthy, and delicious!

Monkeys & Costume Parties | Loepsie’s Life

Happy Monday, my lovely readers! I can’t believe it’s Monday again. The weeks have just been flying by, November will be here before we know it, and I feel like there’s still so much I need to do before the move. It’s time to up my productivity! Luckily I have all of my content planned out for the weeks to come, I just have to film, edit and write everything and make sure it’s all scheduled. I’ve been trying to come up with a moving schedule today so that I know when to do what and to be sure I don’t forget anything. Any tips from experienced movers would be more than welcome! Anyways, let’s take a look at what I was up to last week through my photo diary 🙂

My brother helped me make a model of our new apartment in SketchUp, including most of the furniture we’re planning to buy. Look how tiny it is, haha! It’s actually even smaller in real life, as we made the kitchen way too long in the model. It’s really nice have such a 3D model of the house though, and to be able to move furniture around digitally before we decide to purchase anything.

Pumpkin Sage Pie | Vegan Recipe

When I was in Edinburgh this summer, we sat down in a little restaurant called Mums Great Comfort Food to have dinner one night. The place was packed, usually a good sign, and I ended up ordering a pumpkin sage pie off the menu. My oh my, was it good! Deliciously soft pumpkin covered in a creamy tomato sauce, with a subtle hint of sage, and crispy puff pastry on top… After I came home I couldn’t stop thinking about it, so I decided to cook my own. Of course I have no idea how they make the pumpkin sage pie at Mums, and I don’t remember exactly how it tasted either, but what I do know is my own version is pretty amazing, if I dare say so myself. It’s fragrant, it’s full-bodied, it’s healthy, vegan, and just plain delicious. Try it yourself!

Oh, of course it wouldn’t be a Loepsie dish if it wasn’t also impossible to photograph 🙂
