One can never have enough breakfast options. Especially when the options are pretty much dessert, but healthy and nutritious. One of my personal favourite breakfast foods is oatmeal, mainly because you can prepare it in countless different ways. But it’s also a great source of energy, easy on the budget, and really simple to prepare. I have a few staple oatmeal recipes that I rotate, but it’s fun to switch things up every once in a while. The recipe I’m about to share with you today is absolutely perfect for that. Behold, delicious carrot cake oatmeal!
Ingredients
1/2 cup oats
1 cup milk of choice (I use soy, but nut milks would do great)
3 tbsp shredded carrot
1 1/2 tbsp chopped walnuts
1 tbsp raisins
1/4 tsp vanilla extract
1/8 tsp cinnamon
Optional: 1 tbsp sweetener of choice (sugar, honey, agave/maple syrup)

Peel & shred one small carrot, or enough to get roughly three tablespoons’ worth. Don’t worry if it’s a bit more, you can’t really mess up this recipe. Add it to a saucepan with the oats, milk, raisins, vanilla extract and cinnamon. I have a notoriously non-existent sweet tooth so I don’t sweeten my oatmeal, but if you’d like to do so; now’s the time to add a tablespoon of (brown) sugar, honey or your favourite syrup. Cook on a low to medium heat for 5-10 minutes while stirring continuously, until the oatmeal becomes nice and gloopy.
Roughly chop the walnuts and stir through the oatmeal when it’s done.
You can top the carrot cake oatmeal with a dollop of yogurt for a bit of that cream cheese frosting feeling.
Guys, this is such a wonderful way to start your day. Sure to put you in a good mood! It’s super quick and easy to make, and perfect for beginning cooks as you can’t really go wrong with this recipe. I feel like the combination of these ingredients would work great no matter what quantities you use, so feel free to experiment with adding more or less carrot or toppings according to your taste.

Btw, I just watched your “Assumptions” video and thought you might be interested in trying the LOTR audiobooks narrated by Rob Inglis. You could listen to them while doing your exercising and it might be more enjoyable than reading the actual paper version.
