Sundried Tomato Hummus

Hummus is one of my favourite discoveries of the past couple of years. It’s healthy, filled with proteins and antioxidants, and DELICIOUS! This version with sundried tomato makes the original even better and healthier, leaving out the tahini and using less oil than classic hummus. Plus, who can resist sundried tomato?

STH1

Ingredients:

400g can of chickpeas, drained
3 to 4 tbsp sundried tomatoes (the kind in oil)
2 tbsp oil from the tomatoes, olive oil, or vegetable oil
2 tbsp lemon juice
1 clove of garlic
small bunch of fresh basil
pinch of salt

Combine all ingredients and blend with a handblender until smooth. If you find the texture too grainy, add more oil. Keep in mind that this will not be as runny as classic hummus because we used less oil!

I love to serve this with strips of cucumber, bell pepper, or crackers for some guilt-free snacking throughout the day.

This is one of my absolute favourite snacks to have, and as many of my friends love it as well, I often serve it to my guests. A real crowd pleaser, this one!
