Once again I’m very late to jump on this bandwagon, but I finally learned to appreciate the superfood sweet potato. I’ve figured out how to make the perfect crispy baked sweet potato fries with delicious honey mustard sauce. They’re to die for!
I used two sweet potatoes and ate all of it myself. With some falafel. I eat like a giant though, two potatoes could serve two people with small appetites.
Ingredients:
Sweet potato
Paprika
Salt
Pepper (or cayenne pepper)
Preheat the oven to 200°C
To begin, I sliced my sweet potatoes with a mandoline to get even, thin fries. If you don’t have a mandoline you can definitely do this by hand. You can make your fries thicker, but I find that thin ones get nice and crispy!
Put the fries in a large bowl and toss with salt and paprika. I used cayenne pepper to give it a bit of a kick, but you can use black pepper instead. I eyeballed the measurements here, it depends on how big your potatoes are and how spicy you like it. Experiment with the seasoning!
Spread the fries on a lined baking sheet and bake for 15 minutes. Turn the fries and bake for 15 more minutes to get them crispy on all sides.
The trick to getting nice, crispy fries, is actually to not use any oil when you bake them. This makes them even healthier, too!
I served these with a delicious honey mustard sauce which I learned to make from a friend.
Ingredients:
1 tbsp honey
1 tbsp mustard
1 tbsp mayonnaise
Combine the ingredients. It’s simple as that, and you won’t believe how good this tastes! Very pure flavours, I love it. I use yogurt mayonnaise, which is a healthier alternative to mayonnaise with less fat.
My life has changed since I have these fries in it. It’s unbelievable how something this good can be this healthy! I hope you enjoy your fries!

Try this oil free recipe and make sure there aren't too many fries on the baking sheet. They shouldn't overlap!
Whenever I make sweet potato fries they always come out soft and not crispy :(
