Healthy Single Serve Apple Crumble

Sometimes when I’m craving a snack, I want a little bit more than just an apple. Something warm, comforting, delicious… But still healthy. Today I’m bringing you just that! Prepare to fall in love with this healthy single serve apple crumble.

Ingredients:
1 medium sized apple
1 tbsp raisins
2 tbsp oats
1 tbsp honey
1 tbsp chopped walnuts
pinch of apple pie spices
pinch of cinnamon
pinch of stevia

Pre-heat the oven to 180°C.
Peel and dice the apple into small chunks. Toss with the raisins, pinch of stevia and pinch of cinnamon (I just eyeball these measurements, add them to taste) and place in a small ramekin. Bake this for 25 minutes.

While the apple’s baking, combine the oats, walnuts, honey and apple pie spices. I used ‘koek en speculaas kruiden’, a mix very similar to pumpkin spice. Mix until all the oats are evenly covered in honey. After 25 minutes, take the apple out of the oven, and cover it in the oat mixture. Put back in the oven for 10 more minutes, until the oats crisp up.

This is so good! And it doesn’t contain any bad ingredients. The perfect autumn/winter snack, if you ask me! You could even have this for breakfast. This recipe serves one, but you can of course multiply the ingredients to make more portions. Enjoy!

  2. Loepsie I went through all your recipes and I ended up saving most of them into my recipe binder. They are perfectly my style and taste, and are actually doable for me. Simple, but the effect is substantial. That is, I know I won't be hungry after an hour :D I bought sweet potatoes today, too, and as soon as I eat up my avocado paste I will make the tomato hummus.
