Robbert and I have a little tradition of celebrating Christmas Eve Eve with just the two of us before we go our separate ways to celebrate with family. We get together, exchange gifts, and cook a festive dinner. Two years ago I made this dish for Christmas Eve Eve: herb crusted salmon and pommes duchesse! It’s delicious and I wanted to share the recipe with any of you that may still be looking for a festive dish to cook. Or just a nice dinner!
Ingredients
Herb crusted salmon
300 gr salmon fillet
70 gr butter
1 lemon
Pinch of salt
Fresh parsley
Fresh dill
Fresh chives
Breadcrumbs
Pommes Duchesse
500 gr potatoes
1 tbsp butter
Salt
Pepper
Nutmeg
Herb Crusted Salmon
Pre-heat the oven to 200°C.
To make the crust, finely chop the herbs. I prefer to use around 3/6 parsley, 2/6 chives and 1/6 dill, but you can use however much of the herbs you like.
Knead the butter with the herbs and a pinch of salt, and slowly start adding breadcrumbs until it forms a dough. You can also add a little queeze of lemon juice.
Cut about two thirds of the lemon into slices. Squeeze the juice of the other 1/3 of the lemon over the salmon. Put two slices aside for garnish, and place the other slices underneath the salmon on the baking dish.
Bake the herb crusted salmon for 20 minutes.
Pommes Duchesse
Peel and dice the potatoes, and boil them in salt water for 20 minutes. Pre-heat the oven to 200°C.
When your potatoes are soft, add the butter and a pinch of pepper and nutmeg, and mash them into a soft, creamy mash. Put the mashed potatoes in a piping bag and pipe them onto a baking tray in rosettes of around 4 cm wide.
Bake for 20 minutes.
The salmon and potatoes are baked for the same length of time at the same temperature, so you can bake them together and serve them both hot! I really hope you love this recipe as much as we do.

The pommes duchesses are so easy to make ! I won't ever buy the frozen ones again :)
I have a question though, how do you place the crust over the salmon ? Just like a blanket ? (oh god what, a blanket ?!)

Loepsie I know it's not THAT hard, but I think that even if I do it myself, it would be better to try at my parents' house because the kitchen is better there :D
Also, do you know anything that I can use instead of dill? I just CAN'T find it in Portugal D:
It sounds really fancy but it's actually not hard to do at all! I encourage you to try it yourself, I think you'll be amazed by how much you can do :)
