Food For Life | Loepsie’s Life

Good day to you my lovely readers!
I’ve had such a fun weekend. On Saturday I went to a music festival in Utrecht with Robbert and a friend of ours, and on Sunday I spent all day in a rehearsal of the dance performance we have coming up next week. This morning I woke up with a cold though, so I’m going to have to try and take it easy for a bit, even though I have a busy week coming up. We’ll see how that goes, but let’s take a look at what last week has been like, first!

Saturday

1

On Saturday was my last normal day at the scouting! I joined the scouting three years ago, as a stand-in leader until they found someone else, and ended up sticking around for three years, haha! The thing is though, I don’t really like children. Might sound strange in this context but I actually took up this scout leader thing as a challenge and opportunity for me to learn to understand and appreciate children better. After three years I think I have a right to say that that wasn’t successful, haha! Some of the kids are really sweet and I will miss them, but a group of 10+ hyper children is just too much for me to handle on a weekly basis. It’s time to move on now. I do want to stay involved with the scouting though as I enjoy the activities and the company, so I’ve decided to stay next year and coordinate activities for the other leaders. I’m looking forward to it!

Anyways, most of the children that are currently in our group will be moving on to the cub scouts after summer, so I told them I’d be moving on to another group as well after summer camp, just like them. They understood that and took it really well! I’ll definitely be coming around every now and then to see how they’re all doing :)

After scouting I headed over to Robbert’s place where I spent the rest of Saturday and part of Sunday, before coming back to my parents’ house.

Monday

2

Rattie cuddles! Monday was a typical, boring day where I sat behind my laptop all day editing and writing. And playing with the rats.

Tuesday

3

Morning! After breakfast and a cup of tea I cleaned up a little and wrote my grocery list.

4

And this is what I ended up getting! Bread, peppers, apricots, yazzara, white cheese, almond milk, strawberies, chickpeas, tomatoes, onions, cream cheese and tomato paste.

5

Time for a fruity snack! Summer fruit is my favourite, I can’t get enough of it.

6

I filmed the boho hair tutorial.

7

And edited it right away!

8

In the afternoon I felt like going out for a walk, and I decided to walk a little further and check on the rose garden.

9

It was looking gooood! I love this place, it’s so beautiful when all the roses are in bloom. The perfect place to sit down and read a book! I didn’t do that now but hopefully I’ll be able to find the time for it soon.

10

An impatient person’s tomato risotto, haha! It’s a tad too watery but it was really good.

Wednesday

Surprise! I decided to vlog on Wednesday, in English, for Loepsie. I’ve been getting so many requests for vlogs lately that I wanted to give it another go. In the past vlogs haven’t done well at all on my channel compared to my other videos, but we’ll see how this one goes down. It’ll be up this week!

Thursday

11

Robbert was here and working hard for his very last test, so I was exiled to the bed (yeah, I really need a bigger house). I spent some time planning posts and videos.

12

In front of the window which wasn’t nearly as sunny as it looks here, haha!

13

I made some roasted chickpeas, of which I took photos and as I was writing the accompanying post, I got such bad cravings I ate them all, haha!

14

More groceries! I got crisps, wraps, cauliflower, wild peaches, avocados, corn, beans, passata, cheese, peppers and sandwich spread.

15

One of my least favourite things to do: washing makeup brushes. Takes so long! But it needs to be done and I’m always happy when it’s finished.

16

A MASSIVE portion of Mexican food! Love love love this. It’s the most un-instagram-worthy dish ever though, haha!

Friday

17

Fruuuuuuit!

18

And lunch, in the middle of filming. I made a grilled cheese sandwich and a little salad.

19

Video done! Anna Pavlova’s episode of Beauty Beacons.

20

And the civil version, after filming another video for the Dutch channel.

21

I would’ve liked to go out but it was so rainy out :(

22

One of the best thing is putting a fresh scent in my essential oil diffuser. Jasmine & bergamot this time!

23

I made some prosecco & strawberry popsicles, oh my. This is goood! Recipe will be up soon as well :)

This week I’m going to try to work ahead as much as I can manage, but also try to recover from this cold as soon as possible so that I can do the dance performance Sunday. Let’s do this!

  1. Hi dear Lucy!
Please tell me the recipe of the Mexican salad that you show on this post. Is it the one with the beans/corn/tomatoes/onion one you showed in one of your videos? I’m a little confused because I don’t know if you use raw tomatoes or cooked/fried?
P.s. you have an awesome channel!

    1. Hi Marina,

This is a different dish, but I’m afraid I really don’t remember what’s in this one ( it was months ago, haha). The salad I showed in that video was all fresh, raw veggies except for the beans and corn, those were canned :)

  2. you never showed us the intersection in front of your building. I assume it’s finished because you don’t mention the racket anymore.
