We’re in another heat wave! I get super excited about these as we scarcely have temperatures near or over 30 degrees here in the Netherlands, and I do enjoy a bit of heat myself. Since we got a little portable airconditioner to keep the rats (and ourselves) safe and cool inside, warm weather has been even better. I love sitting out on the balcony and enjoying the scents of summer in the air.
When it’s super hot out, I find myself craving completely different foods than I normally do. In the heat I only want to eat fresh-flavoured, juicy, cold food. One of my absolute favourite things to have in summer is a watermelon salad, with vegan feta cheese and fresh mint leaves. It’s delicious, thirst-quenching, and healthy. Even though it’s a very minimal recipe and ridiculously simple to make, I still wanted to share the “recipe” with you today, in case you haven’t tried this yet. It’s divine.
Ingredients
1/4 (smaller) watermelon
1/2 cucumber
1/2 red onion
1/4 block vegan feta cheese
Handful fresh mint leaves
Extra virgin olive oil
Balsamic vinegar
Sea salt
Black pepper
Instructions
Cut a quarter of a small watermelon into cubes, and put in a large salad bowl. Cut half a cucumber into cubes as well, with the peel, and add to the bowl. Cut the onion into quarter rings, and mix in with the melon and cucumber. Crumble over some (vegan) feta cheese, and add fresh mint leaves. You can add both of these ingredients to taste.
Drizzle some extra virgin olive oil and balsamic vinegar on top for a dressing. Season lightly with sea salt and black pepper, and toss everything together.
And that’s it! You’ll be done in a pinch, and trust me, this salad is more than worth the minimal effort. The flavours go incredibly well together, and the salad is the most cooling and fresh thing you could have.
The watermelon mint salad can be served as a side-dish, or as a snack. Enjoy!
