Moroccan Lentil Stew

I’ve fallen in love with Middle-Eastern flavours. Hummus, baba ganoush, muhammara, ras el hanout, mint… I can’t get enough! When I came across this recipe that combines moroccan flavours and lentils (my favourite food!), I had to try it ASAP. And when I did, magic happened. I adapted the recipe slightly and my! Is it good!

Sundried Tomato Hummus

Hummus is one of my favourite discoveries of the past couple of years. It’s healthy, filled with proteins and antioxidants, and DELICIOUS! This version with sundried tomato makes the original even better and healthier, leaving out the tahini and using less oil than classic hummus. Plus, who can resist sundried tomato?
